Delicious Steak Salad

I love steak. Put steak on anything and I'll eat that too...that's the magic of this dish! Throw a bunch of delicious, fresh veggies to make a salad and top with a red juicy steak and you've got a very happy meal. 

Ingredients:

• Rib-eye steak 
• Salt/Pepper
• Romaine lettuce
• Tomatoes
• Red onions
• Bell peppers (red, yellow and/or green)
• Avocados
• Pecorino Romano cheese (in small chunks)

For Dressing:

• 1/2 shallot, chopped fine
• 1 garlic clove, chopped fine
• 1/2 lemon, juiced
• 1 tblsp red wine vinegar
• 1 tsp dijon mustard
• About a 1/4 cup olive oil
• pinch of sugar

Directions:

1. Season steak liberally with salt and pepper and allow to come to room temperature. Preheat grill pan.
2. In the meanwhile chop up vegetables and cheese in to bite-sized pieces and assemble salad in a large bowl.
3. Toss the salad with enough vinaigrette to coat. 
4. Cook steak over a hot, oiled grill and allow to sear for about 3 minutes on each side depending on the thickness of your steak. 
5. Remove steak from the grill and allow to rest for a few minutes.
6. Slice steaks crosswise into thin slices. Arrange the steak slices atop the salad and drizzle with additional vinaigrette to taste.
7. Serve and enjoy!

For the dressing:

1. In a small bowl put the garlic, shallots, lemon juice, vinegar and dijon. Whisk till combined.
2. While whisking, drizzle in the olive oil. Season with salt and pepper to taste and finish with a pinch of sugar to round out the flavors.

 

 Any vegetables of your liking would work well with this salad. 

 

I like to use creamy avocados when they're in season for extra richness. 

 

 Fresh lemon is a great base for a quick and easy vinaigrette.

 

Ribeye is one of my favorite cuts of meat!

 

 Sear each steak on both sides and allow to cook to your desired temp. If you like your steak well done, you can allow the middle to finish cooking in a preheated oven at about 400 degrees.

 

 Serve and enjoy!
